Serves 4

  • 2 oranges
  • 2 naartjes
  • ½ cup chopped dates
  • ½ cup chopped walnuts
  • ½ cup pitted and chopped olives
  • 1 tbsp white sugar
  • 2 tbsp lemon/lime juice
  • Parsley to garnish
  • Salt and pepper

Peel the citrus and slice into rounds, roughly ½ cm thick.

Add the chopped dates, olives and walnuts.

Make the dressing by dissolving the sugar in the lemon/lime juice.

Lightly dress the salad and garnish with flat-leaf parsley.
