SPICY COOKIES FOR CHRISTMAS

Ingredients

  • 4 cups cake flour
  • 2.5ml salt
  • 5ml ground ginger
  • 5ml ground cloves
  • 5ml ground cinnamon
  • 1tbsp white chocolate
  • 1tbsp fruit cake mix
  • 1cup + 60ml soft butter
  • 1½  cup caster sugar
  • 5ml bicarbonate of soda
  • 30ml lukewarm water
  • 1 egg

Method

Sift all the dry ingredients together

Add the sugar, chocolate and fruit cake mix

Rub the butter into the dry mix

Mix the water and bicarbonate of soda and add to the dry mix

Add the beaten egg

Process into a firm dough

Roll out to about 1½ mm and bake @ 180°C until it starts to colour

Leave to cool before serving
