Chicken Caprese Wrap Recipe


2 tablespoons olive oil

2 tablespoons white wine vinegar

¼ teaspoon kosher salt

¼ teaspoon black pepper

4 cups chopped lettuce

1½ cup shredded chicken breast

¾ cup fresh mozzarella cheese, chopped

½ cup fresh basil leaves, torn

200 g cherry tomatoes, quartered

cooking spray

4 wraps

1 large garlic clove, halved


Combine the olive oil, vinegar, salt and pepper in a large bowl, stirring with a whisk. Add the lettuce, chicken, cheese, basil and tomatoes.

Toss to coat.

Heat a large non-stick skillet over medium-high heat. Coat the skillet with cooking spray. Working with 1 wrap at a time, cook wrap 1 minute on each side or until toasted. Rub 1 side of each wrap with cut sides of garlic.

Arrange the chicken mixture in the centre of each flatbread and roll up.
