“But sometimes we can teach the French a thing of two about flavour”, says  Winemaker Renier who decided to share some of his authentically South African potjiekos recipes in answer to Chef Christiaan’s French classics. His Chakalaka Chicken and Lamb Shank with Dombolo are perfect for a sunny day when you can light the fire!

Forgetting all about the classic French techniques, Renier's Chakalaka Chicken pot is as authentically South African as they come with bright and tangy flavours adored by most of us. While the the chef's Burgundy recipes call for Pinot Noir and Chardonnay, Renier suggests the versatile and food-friendliest wine of all time, the 2023 Culinaria Chenin Blanc as a match the spiciness of his Chakalaka Chicken.

Renier does admit that he loves a patiently cooked Boeuf Bourguignon, so rather than taking the chef on with another beef stew, he presents his Lamb shank pot. And as an answer to the French baguette served alongside any French stew, Renier steams traditional South African dombolo on top of his potjie! What a game changer! Wine wise, Renier believes in the classic combo of Bordeaux blends and lamb and recommends a generous glass or two of the 2021 Culinaria Grand Vin when you try any lamb - but especially with his recipe.
