Christmas Cake Ice Cream Wreath

Ice cream is such a popular summertime dessert, but we often feel like it is too easy and perhaps not special enough for the festive table. But we've made a plan! Try Chef Christiaan's Christmas Cake Ice Cream and serve it as a beautiful festive wreath and with our delicate dessert wine, the Culinaria Muscat!

Easy Christmas Cake Ice Cream Recipe

Ingredients

4 large egg yolks

100 g caster sugar

175 g leftover Christmas Cake

2 - 3 Tbsp brandy

250 ml double cream

Method

Whisk the egg yolks and sugar with an electric whisk for 10 mins until pale and fluffy.

Break up the Christmas Cake with a fork and stir it into the egg mixture so it is evenly distributed. Add brandy and mix well.

In a separate bowl, whip the cream until it holds soft peaks, then fold it into the mixture with a large metal spoon.

Pour into a freezer-proof container, cover well and freeze for several hours until set.

Decorate with biscuits, fresh fruit or flours.
