Festive Soetkoekies

If lockdown didn't spoil baking for you, then it is about time to start baking your holiday cookies! Try this easy recipe for easy, flop-free and delicious cookies. If you're pressed for time, just dunk them into the glaze and if you want to go all out on the decoration, use festive sprinkles and patterns! 

Ingredients

1 cup butter, softened

1 1/4 cups icing sugar

1/2 teaspoon salt

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

2 1/2 cups all-purpose flour

Glaze:

1 cup icing sugar

2 to 3 tablespoons water

Coloured sugar and sprinkles

Method

Preheat oven to 180°C. In a large bowl, cream butter, icing sugar and salt until light and fluffy. Beat in egg and extracts. Gradually beat flour into creamed mixture.

Using a cookie press fitted with a disk of your choice, press dough 5cm. apart onto ungreased baking sheets. Bake until set, 6-8 minutes (do not brown). Remove to wire racks to cool completely.

In a small bowl, mix icing sugar and enough water to reach desired consistency. Dip cookies in glaze or decorate as desired.

Leave until completely set.
