Light the fire!

Light the fire!

Lighting a fire has a lot of significance in South Africa. Much more than preparing coals for cooking, creating heat on a chilly day or trying to keep wild animals at bay, there is a certain sense of joy that comes with packing and lighting a fire. 

Sometimes we light a fire at the end of a long day, only to stare at the flames and relax, but often gathering around the fire is our preferred way of socialising and cooking for friends and family. One of the reasons why cooking over an open fire is so significant in South Africa, is that it a shared tradition, despite the diversity of our population. 

This is of course also the reason why we call Heritage Day, National Braai Day and use the excuse to keep the fires alight for the whole of September! Inspired by some favourite braai recipes, Chef Christiaan developed a few new flavour combinations to enjoy this September.

Harissa Leg of Lamb Chops 

Grilled Tenderstem Brocolli with Lemon and Parmesan

Braai Slaai (Potato Salad in a whole new way!)
