PORK, APPLE SAUCE AND BEAUTIFUL BUBBLES

Adding some sweetness to savoury dishes is a very South African thing, but enjoying apple sauce with pork is a winning recipe anywhere in the world. Try Chef Pieter’s delightfully fresh apple sauce with any delicious roast or grilled pork cut and then, wait for it, serve it with a glass of our Culinaria Methôde Cap Classique Sparkling Wine!

The full character of the Culinaria MCC will stand up to the flavour of the pork while its fruity character will complement the acidity and sweetness of the apple sauce.

Apple Sauce Recipe

Ingredients

4 Granny Smith apples, peeled and cored

150g butter

1 tbsp brown sugar

1 cinnamon stick

Salt and pepper

½ cup of water

 

Method

Chop the apples roughly into 2 cm blocks.

Melt the butter in a heavy-based saucepot; add the apples, sugar, cinnamon, salt, pepper and water.

Place a lid on the pot and cook for 15 to 20 minutes, until the apples are completely cooked and soft.

Remove the cinnamon stick.

Blend the apples in a food processor until smooth, season to taste.

The sauce can be served either hot or cold with roasted pork.
