Wine Down Sours Mocktail Recipe

Ingredients:
50 ml Fresh Pineapple Juice
20 ml Sumac & Cinnamon Syrup
25 ml Lemon Juice
35 ml Leopard's Leap Natura Red
Glass: Tumbler/Whiskey Glass/Rocks
Ice: Cubed
Garnish: Mint Sprig
Method: Shaken
Sumac & Cinnamon Syrup:
*Please Note: Sumac is available at most grocery stores and can be found in the dried spices section.
5 g (1 Teaspoon) Sumac
2 Cinnamon Quill (loosely broken up) or 5 g (1 Teaspoon) of Ground Cinnamon
500 ml Water
500 g Sugar
Add water and sugar into a pot. bring mixture to a gentle simmer.
Add spices.
Let simmer on medium-low heat for 10 minutes.
Wait for mixture to cool.
Bottle and use as required.
Method:
Add all ingredients (except the Natura) to a cocktail shaker/mason jar/tupperware with ice.
Shake for roughly 15 to 20 seconds.
Strain ingredients through a tea strainer into a glass filled with ice.
Grab a tablespoon and slowly pour the Natura over the back of the spoon to create a beautiful float on top of your lovely cocktail. (This is a technique used for layering liquids.) When using fresh pineapple juice, a layer of foam will form which helps hold the wine float in place, but if you don't have fresh, not to worry, the float will still hold just perhaps not that long.)
Gently clap the mint between your hands, this activates and wakes up the aroma and then gently place it within your cocktail.
