Yellowtail on the Braai with Chermoula

Yellowtail on the braai with chermoula

Serves 4

1 kg Yellowtail fillet
2 Tblsp Olive oil blend
Juice of 1 Lemon
to taste Sea salt

3 Tblsp Lemon juice, freshly squeezed
6 Tblsp Extra virgin olive oil
1 clove Garlic, finely chopped
1 tsp Paprika
3/4 tsp Cumin, ground
Small pinch Cayenne pepper
2 Tblsp Coriander leaves, finely chopped
2 Tblsp Flatleaf parsley, finely chopped
Sea salt to taste

To make the chermoula, whisk together all the ingredients and allow to stand while the yellowtail is on the braai.
Drizzle the yellowtail fillet with the olive oil blend, lemon juice and season with sea salt.
Braai without turning over medium coals for 8 minutes on each side.
Remove the yellowtail from the braai and generously spoon over the chermoula.

Enjoy with a glass or two of the 2020 Leopard's Leap Chenin Blanc.
