Christmas Cookie Recipe
Makes 12
Ingredients
- 375 g cake flour
- pinch of salt
- 250 g butter (room temperature)
- 125 g castor sugar
- 1 egg
- 1 packet of Sparkles sweets
Method
Pre-heat oven to 180 °C.
Sift together flour and salt.
Cream butter and sugar. Add egg and beat well.
Add flour to butter mixture and mix well until it comes together.
Turn dough out onto a floured surface, roll into a ball, cover with cling film and rest it for an hour in the refrigerator.
Take the dough from refrigerator and roll out to 5 mm.
Use various cookie cutters to cut out Christmas shapes and place the cookies 2 cm apart on a buttered baking sheet. (We have a lovely selection of cookie cutters in our shop!)
Use a smaller cookie cutter to cut out a form in the middle of the existing cookie and place a Sparkles sweet in die space.
If you want to use them as Christmas tree decorations, remember to also make a small hole in the middle/top of the cookie.
Bake 12 to 15 minutes until golden brown and until the Sparkles sweet has melted.
Allow time to cool down and enjoy!
Then:
- Put the cookies in a pretty tin or glass jar, tie a festive ribbon around it and give it to someone special as a Christmas gift.
- If you made a little hole in them before baking, string through some ribbon and hang them in your tree.
- Stack them high on a pretty plate and serve with a lovely glass of our 2014 Culinaria Muscat de Frontignan!
