Lamb Kofta Recipe

Lamb kofta

Serves 4

500 g Lamb mince 
2 tsp Cumin seeds, whole 
3 tsp Coriander seeds, whole 
2 Garlic cloves, grated on microplane 
2 tsp Fresh mint, chiffonade 
2 tsp Fresh flat leaf parsley, finely chopped 
1 tsp Sea salt 
1 tsp Black pepper, freshly cracked 
1 Tblsp Olive oil blend 

Thoroughly combine all the ingredients.
Divide into 8 equal size balls.
Roll each ball on a board with a cupped hand to turn them into ovals. 
Thread 2 koftas each onto four metal skewers and brush with oil.
Heat a grill pan over high heat until you can feel a good heat rising and cook the koftas for 3-4 minutes each side.
Remove the koftas from the grill pan and season lightly with sea salt before serving.
