The Chescato Tonic Wine Cocktail

A play on the classic G&T, the Chescato Tonic contains a cordial of sophisticated Pastis, some familiar Old Spice and a sweet Amaretto kiss. A tall and refreshing riff on the G&T for sunny days and pool parties.

Ingredients

50 ml Leopard's Leap Chescato 
50 ml Mulled Wine Cordial (see recipe below)
120 ml Indian Tonic Water
Baby's Breath (Gypsophila flowers) to garnish

Method

To make the cordial:

In a small pot bring 2 cups of granulated sugar to the boil with 1 cup (250 ml) of Chescato
Add 25 ml of Amaretto and 15 ml of Pastis
Add 100 ml Pressed Apple juice
Add 100 g Ground All Spice
Boil until sugar dissolves
Chill mix and strain through a super filter into a clear bottle

To build the cocktail:

Step 1 Build all ingredients into a Highball glass
Step 2 Add ice to top of glass
Step 3 Add tonic water to top
Step 4 Garnish with Baby's breathe
